Pork and Chive Dumplings

MAKES  30 DUMPLINGS | COOKING TIME :  1.5 HOURS

We live in an amazing country filled with different cultures! In Australia, walking through the streets reveals restaurants which serve different cuisines. From Japanese to Ethiopian, it is clear that the ingredients in Australia enable the creation of most cultural dishes. With this in mind, as my background is Chinese - Malaysian, I would love to share my recipe for pork and chive dumplings!

The Process

INGREDIENTS

Dough

  • 400g all purpose or dumpling flour

  • ¼ tsp salt

  • 240 ml water

 

Filling

  • 500g pork mince

  • 120g chives

  • 1 tbsp soy sauce 

  • ½ tsp ginger paste

  • 1 egg white 

  • ¼ tsp white pepper powder 

  • ¼ tsp five-spice powder 

  • 2 green onions 

  • ½ tsp salt

  • 1 tsp sesame oil

  • 50 ml oil

METHOD

Dough

  1. Add flour, water and salt to a bowl.

  2. Mix until a dough forms.

  3. Knead until smooth and rest the dough for 1 hour.  

  4. Separate the dough into 3 batches.

  5. Stretch the dough into a longer roll, and cut into pieces.

  6. Dust with flour and press down to form flat circles. 

  7. Use a rolling pin to create a thin dumpling wrapper in the shape of a circle. 

 

Filling

  1. Chop all vegetables into smaller pieces and cubes. 

  2. Add mince, soy sauce, ginger paste, pepper powder, five-spice powder, onions and egg white into a bowl. 

  3. Heat up oil in a wok until it is hot. 

  4. Pour directly into the bowl with all ingredients and mix. 

  5. Mix fresh chives with sesame oil and combine with meat.

 

Assembly

  1. Take thin dough wrappers and place a spoonful of filling into the centre. 

  2. Pinch the edges together (in which ever fashion you want)

  3. Crimp the edges together to create a design.

 

Cooking - Two options 

  1. Frying:

    1. Place oil in a pan and place dumplings inside. 

    2. Add water into the pan and close with the lid. 

    3. Once all water is evaporated, remove from the pan. 

 

  1. Boiling

    1. Allow water to boil in a saucepan.

    2. Place dumplings into water.

    3. When the dumplings begin to float to the top, remove from the water.
